Among other things for breakfast, I made an old favorite: gingerbread oats. 1/2 tbs molasses, sprinkles of cinnamon, nutmeg, cloves, and ginger, and topped with blueberries that are actually purple.
For my AM snack I had some fruit leather and puffins, no pic. I've had a jar of chocolate soynut butter sitting in my pantry for the longest time. I tried it once and didn't like it very much, but I need to use it up eventually so I tried it again today. I grilled it on WW potato bread with some sliced strawberries and it was pretty yummy! I am convinced that grilling any sammich makes it taste a million times better! I also had a vanilla Chobby wob, sliced apples, and a TLC bar.
We had a lot of bananas getting ripe so I used them to make cookies! Or, I don't even know if I should call them cookies because they're refined sugar-free and I want to eat them for breakfast. Oooh I know, I'll call them Healthy Breakfast Oatmeal Cookies! Sorry I don't have a better picture, but I ate them with cottage cheese + blueb and an orange.
Ingredients:
- 2 c oats (I used a mix of 4 grain and old fashions. I'm not sure how quick would work)
- 1 c whole wheat flour
- 2 tsp baking soda
- 1 c + a couple extra tbs as needed applesauce
- 1 tsp vanilla
- 1/4 c molasses
- 1/4 c honey
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp vanilla
- 1 chopped banana
- Preheat oven to 350 degrees.
- Combine all ingredients with a spoon. Drop by heaping tablespoonfulls onto a greased cookie sheet.
- Bake in batches of a dozen for 14-15 minutes per batch. Remove from pan and let cool completely.
For dinner we made a spinach and cheese fritatta. Yes, I realize this is almost exactly what I ate for dinner last night. I don't care. The fritatta was made of 5 eggs, 2 tbs of milk, 1/2 c parmesan cheese, pinches of salt and pepper, about 4 c of spinach, and 2 slices of cubed mozarella. Combined the eggs, milk, parm, salt and pepper, dumped it over wilted spinach in a skillet, topped with mozarella, and broiled it for 3 minutes. It was delish. I also had two slices of French bread.
And an apple plus melted Zbar goodness. I love me some carbs, probably too much. But I'm sick so I can eat what I want.
Soo tomorrow I'm having a class party, I forget the reason why. I can't eat at these things for the life of me. I wish I could just eat and enjoy myself, but ED always bugs me. Eating spontanesouly is the worst for me. And it doesn't help that I have no friends in my class to socialize with. It just makes me even more nervous to have to make smalltalk to people I don't even know, and I feel like they're judging what I'm eating. Do any of you have tips for eating at parties like this?

School parties are very difficult, I agree, but since you know about it in advance maybe you could pack your own snack? Then you can still eat with your friends but not have to be surprised by what food is put in front of you, you know?
I really hope your head is feeling better. I fell down the stairs a few months ago and really did a number on my brain, so I can totally relate to needing to sleep and rest. Your body needs to heal, and the easier you take it, the faster and better your recovery will be.
I love making 'healthy' cookies and then eating them for breakfast. Any excuse to eat chocolate in the morning is a good one!

Ahh. I'm still struggling with spontaneous eating. To be honest, the easiest way to do it is..dive in. Take a few small bites of everything that looks good, and listen to your body.
If you really like something, go back for seconds!

Mmm I need to try gingerbread oats. I keep meaning to, but I need to buy some digestives(graham crackers) first!
As for spontaneous eating at parties, this is what you have to do from my experience: take a bit of the foods that you like the most or attract you most or whatever. Eat them slowly as you want. If you want more, take it. But keep distracted by socialising with everyone around you , so eating doesn't seem suhc a big deal. Usually works for me :]

i'm portuguese and i'm a victim of ED too, it sucks! i'm new at the blog world and i'm felling so inspired with your blogs and your storys..it really helps me on my day fight with food! i allways try to eat a little bit more but sometimes ED just don't let me and then i feel sick and disapointed with myself because i let ED wins me :(

Oh I'm sorry you're still ill, but atleaast it means no school! That stinks that you had to make up the work, isn't the medical conditiona dn a note from your parents a good enough excuse? Fabulous eats today, I always grill (or toast) my PB sandwiches when I'm at home too! (I'm a sucker for "carby sweet-ish or very sweet things too!)Is it mandatory to go to the school thing, becasue I know we should go to "socials" like dances or things involving our peers outside of school and likely food, but it's definatly can be a challenge. Don't worry, we always feel like they are, but it isn't likely people are judging what we eat unless it's like a plate of vegetables and one slice of WW bread. I used to be uncomfortable to eat in public situations alone and isolated, but we put our selves there in the first place so we can't keep hiding. Good luck love, E-mail me when you get a chance! ;)
