Tofu Tacos (Tofacos!)

Hm, so I read over my post from yesterday and it doesn't make much sense to me now. I was sleep deprived, so I hope I didn't confuse anyone! The point was that after seeing the devastating effects of ED in one of my friends, I decided not to let ED bully me around anymore. This is my life, not ED's, and if I want to eat cookies without guilt, I should be able to!

Breakfast this morning was a grilled cheese sammich, apple, plain yogurt, and this bowl of Blueberry-Gingerbread Oats!

I found gingerbread tea at the supermarket the other day, I was ecstatic! So this morning I brought a cup of water to a boil and added the teabag. I let it steep until it was pretty strong, then I added my dry oats and cooked them as usual.
Then I added in dashes of cinnamon, nutmeg, ginger and cloves; 1/2 tbs molasses (love!) and a handful of frozen blueberries. Perfect.

For dinner tonight, meat-eaters were eating beef tacos. I have a block of tofu in the fridge that's going bad, so I mashed together a couple tofu taco recipes to create Tofacos! For the taco filling, I used:

1/4 block (3.5 oz) extra firm tofu
1/2 cup cabbage, shredded
Splash red vinegar (blanking on the name of it..)
1 tsp lime juice
1/4 tsp each of cumin and garlic powder
1 tsp chili powder
Dash cayenne
1 tbs tomato sauce
1 tbs diced green chilies
1/4 of a red bell pepper

First I let the cabbage soak in the vinegar for about 5 minutes. Then I added everything to a pan and cooked over medium-high for five minutes. And voila!

I put them in two corn taco shells and they were so delish, if I do say so myself! Pretty spicy. I used to eat pseudo-meat a lot, but I've stopped eating it over the past couple of months for recipes like this! I don't want my food to imitate meat, I want it to be real and made in my own kitchen! I also had a big bowl o' black beans. I had a microwaving mishap, which is why it's so dirty like that. Whoops.

oh i love those tacos. I love taco shells and spicy stuff so much, whenever the fam is having tacos, i usually just eat the taco shell with hot sauce on it :P but this looks way better! yummy.

TOFACOS :] I saw the title of this post and I laughed a little. I propose that tofacos become the new tofurkey... it has an even funnier name :]] Hehe.

I love all of your meals today. I love your willingness to experiment... you create so many wonderful new recipes this way. You always inspire me to try new things :] I am so fascinated by the idea of gingerbread oatmeal... sounds delicious! I think I'll experiment with gingerbread oats of my own.

your taco's look fantacoastic baby. Try this!

Baked Beans(any beans, but the tomato sauce of baked beans MAKE this recipe)
TACO seasoning.
Fry in a pan.
Add whatever salad you want.
Wrap it up in a Tortilla
Eat up!
MUST ADD SOME CHEESE!

They are my favourite burritos!

yum tofu tacos! i have used crumbeles, temepeh, and beans, but never tofu in tacos. they sound delicious! and your oatmeal, yum :)
