Inauguration Day Eats!

I haven't been so proud to be an American in a really long time. I don't want to get into politics on here (especially considering that I'm not of voting age), but I know that today is the start of a lot of positive change! It felt really surreal to watch the inauguration on TV. I mean, I've been hearing about it for weeks, but now it's actually happened right in my neighborhood district! I have been on the mall, to the White House, the capital, everywhere on TV today. A historic president was sworn in, in the city I'm so familiar with. Amazing. Obama's speech was really moving, yes? And I was very happy to see Yo Yo Ma. He's my future husband too. I think I've lost count of how many I have.

Anyhow, breakfast was a slice of yesterday's banana bread, which is good cold also. Also an apple, yogurt and pumpkin choco chip oats! I put a handful of chips in before I poured my oatmeal in so every so often I got a big spoon of chocolate.

I made my lunch after Obama's speech. I really wanted something patriotic but I didn't have any red, white or blue food :[ So I settled for a hummus and pesto "pizza", since I really like that combo. I spread a couple tbs of each on a sandwich thin and topped it with black olives and spinach.

I had it with a Trek Mix bar, carrots (I would've had an apple but we only had green ones) and a Nature's Promise yogurt. I actually changed my mind and had strawberry, because it's red!

I had to eat dinner on the way to therapy, from my cello lesson. I was kind of just throwing stuff together in the skillet and I created chickpea, spinach, and feta couscous! My food has had a Meditterenean swing to it today. Anyhow, I combined these ingredients in the skillet with 1 tbs of EVOO:
  1. 3 tbs-ish cous cous
  2. 1/2 c chickpeas
  3. 1/2 plum tomato, chopped
  4. 3 black olives
  5. 1 1/2 c spinach
I cooked them until the spinach was wilted and the tomato was soft-ish. Then I then I stirred in 1/4 cup feta and let it melt. I enjoyed this with some PB puffins!
For my night time snack, I tried to make Amazing Basic Pudding from CCV. It didn't work. I brought the agar, milk, and salt to a boil, then turned it down and let it simmer. I ended up letting it simmer for about 10 minutes because those pesky agar flakes wouldn't dissolve! I gave up and poured it into a tupperware container, then stuck it in the fridge for an hour or so. When I looked at it again, it was the consistancy of tofu, or maybe jello? Is it supposed to look like this and this stage? I put it in a bowl with a couple tbs of soymilk, 2/3 c pumpkin, brown sugar and spices. I didn't want to get out my blender so I just used an electric mixer to mix everything together.
It tastes great, don't get me wrong. But it's chunky, and there's no way I can convince myself that I'm eating pudding! Is the problem just that I didn't use a blender? Help me!

Back to school tomorrow. Boooo. I only have one exam, Spanish, so I get to come in two hours later than usual. Hope you all had wonderful Tuesdays!

Hmmm, maybe the electric mixer isn't strong enough to thoroughly blend all the bumps? If it looked like jello, then you got the consistency right, so I'm thinking it probably just needed to be blended longer. Yeah, agar flakes really are darn pesky!

im sorry the pudding didn't work out! i always make pudding on the stove. i have a few yummy recipes if you are interested!
