Better Late than Never

Sorry sorry sorry again! I'm beginning to think that my camera is defective because my computer won't detect it when I plug it in. Last night I ended up uninstalling and reinstalling a whole bunch of stuff just to get my pictures on my computer. I'll do a recap of yesterday.

For breakfast, I made Banana-Date-Walnut Muffins from FatFree Vegan Kitchen. I had no dates, so I used figs. I also used white sugar instead of large crystal sugar. Last, I had no agave nectar and have no idea what it tastes like so I used 1 tbs. of honey and 1 of molasses instead. And I forgot the walnuts haha. So I ended up with Banana Fig Muffins!

They are some of the best muffins I've ever made! Very moist and very sweet, I may have to cut down on the sugar next time.

For lunch, I made a PB+CAB+P (PB, cran-apple butter and pumpkin) quesadilla. It was a yummy combo. Had it with a TLC bar, Wallaby yogurt and an apple.
Then I went to see The Tale of Despereaux! It was okay, kind of boring. Ratatouille is better by a long shot. I went to Whole Foods afterward, just to get some stuff for dinner, veggies, and some weekly staples for me. I try to limit myself to the bars there because they're so expensive, and I could just eat some nuts and fruit lol. That's not to say that I don't love bars, I do! I just don't want my diet to depend on them. I got two.
Luna TeaCake, attune, Brown Cow and Wallaby yogurts, extra firm tofu, Amy's minestrone, potatoes, carrots, and wheat dinner rolls. I also got some nutritional yeast (!) but had already put it away.

For dinner, I made Potato and Fruit Soup from Greek Vegetarian Cookery. This time, I used half dried figs and half dried apricots. Just as yummy as before!

Plus a roll.I'll be back later today to post what I've eaten today.

that soup looks so interesting. i am a addicted to buying bars i could spend all my money on them:) the muffins look yummy! i love figs.

potato and fruit soup? is that savory or sweet? or both? sounds interesting!
oh and what are u planning to do with nutritional yeast? I'm curious...

Ooo, soup! The muffins sound and look great! I love bars too, if I had the money I would definitely go out and try some new ones. ^_^

I LOVED Martin's Whole Wheat Potato Bread. It's definitely one of my favorites now! And whipped cottage cheese is divine! You should give it a whirl!

Do you always prepare your own meals? When I was living at home all the time my mom always tried to do it for me!

To answer your question, I don't think agave nectar has any particular taste, it just tastes sweet like sugar, but in the form of maple syrup. It's definitely not as thick as honey. Woo~ and i see that you bought N. Yeast! I love it! You can make some great cheeze sauce with them. Have fun experimenting :)

p.s. you just made me want to go grocery shopping as well. i think i might just do that today.

I've been hearing a lot of buzz about nutritional yeast so I did a little research and it seems like an amazing superfood! Just curious: how do you cook with it or use it in recipes? I'd really like to give it a try.
