.. of my 2008 school year! This year has gone by so fast, it's scary! So much has changed in my life in the past 12 months. My ED was just starting to get serious at this time last year, but it seems like it was just yesterday that I was wasting away.
Most of my food was boring and typical today, so I won't both with pics. But for dinner, I made Refried Bean Cakes from Happy Herbivore. These rocked socks!! They reminded me of Mexican falafel, sort of. I used Amy's low sodium black beans, and forgot the cornmeal, and they were still fabulous.
I topped mine with some cheddar cheese! I know it defeats the purpose of a vegan recipe blog, but cheese makes the world go 'round. Or more accurately, it's cheese that makes the mice go round, and mice that make the cats go round, and cats that make the dogs go round, and dogs that make the boys go round, and boys that make the girls go round, and girls that make the world go round! That's what I learned from Girl Scout camp. I had it with a sliced banana. Then I decided that I needed toast with PB with it. Then I had a cute widdle bunny cookie!
That's it for tonight. I have to get my friends presents ready!

I LOVE that nugget of "wisdom" you learned from girls scouts! It made me laugh out loud! but for me, strike cheese and put in DURIANS!
