Onto the pasta! Breakfast, lunch, and snack were boring, food-wise. I was thinking about dinner all day though. My mom made me use white pasta to use up what we had in the pantry. It's my #1 fear food, I think. So anyway, I was making it, and making deals with myself about how much of it I would eat. Then I sat down to dinner, starting eating, and you know what? It tasted good. So I ate all of it! A HA! I win ED. Isn't that what normal eating is all about? Eating how much you want of what tastes good? I think so. It was another one of those recipes written on an index card (I think it was from my aunt?) that I modified. Here it is!
Sweet and Sour Spirals
Ingredients:
Sweet and sour sauce-
Served with a quorn cutlet cooked in olive oil, seasoned w/ cumin, oregano and garlic:
Thinking about it, I really needed another carb with it. I'll make up for it tonight with more graham crackers fo' sho'. Peace out.
Sweet and sour sauce-
- 1 tbs. + 1 tsp. ketchup
- 1 tbs. + 1 tsp. sugar
- 1 tbs. + 1 tsp. vinegar
- 1 tsp. soy sauce
- 1/2 tbs. cornstarch
- 1/4 c. orange juice (original recipe called for pineapple juice)
- 1/2 tsp. oil
- 4 oz. (1 c. dry) spiral pasta, like gemilli or rotini
- 1 1/2 c. frozen carrots
- 1 1/4 cups sugar snap peas
- 1 tbs. fresh cilantro
- To make the sauce: Combine the cornstarch with the juice. Heat oil in small saucepan. Add juice mixure and all other ingredients. Cook over medium heat until thickened.
- Cook pasta according to package directions. Drain well.
- In a large skillet, heat sauce for 2-3 minutes. Add vegetables and cook 2-3 more minutes. Add pasta, and cook 3-5 minutes. Stir in cilantro just before serving.

Hey you! Your dinner looks good, but honestly, it looks like a really small amount. Maybe try and work to a larger amount of pasta? It might have just looked small in the pic and everything is fine. But AWESOME job with the white pasta. I also prefer whole wheat because of its nutritional value and because I think it just tastes better. But white pasta every now and again is perfectly GREAT! And WW pasta sometimes just cannot match the real stuff :) Great job! I'm so proud of you! xxx
dinner looks great. i can really relate to the exercise issues, ive been struggling a lot lately with exercise i feel like i always need to be moving its dominating my life, i wish i could just take time to relax. but great job stopping yourself and doing the right thing im so proud of you.
im so inspired by your willpower to not exercise, i struggle a lot with that too and lately have been giving into it and overdoing in a little its really hard but i know i need to stop.
